Recipe: Mile-High Chicken Biscuit

8 4oz. breaded chicken breasts
2 cups prepared cole slaw
¼ cup mayonnaise
¼ teaspoon salt
1 clove of garlic minced
1 tbsp lemon juice
2 tomatoes, sliced
¼ cup dill pickle chips
8 slices pepper jack cheese
8 Ellington Farms Simple-Split Buttermilk Biscuits (thawed)

1. Crush garlic in small bowl with salt. Mix crushed garlic, mayonnaise and lemon
juice in bowl. Cover and place in refrigerator to chill.
2. Place biscuits on baking sheet in 350 degree oven for 10 minutes.
3. Fry chicken breasts in 350 degree oil for about 12 minutes, or until they maintain a
165 degree internal temperature.
4. Place fried chicken breast on biscuit bottom. Stack with slice of pepper jack cheese,
¼ cup prepared coleslaw, slice of tomato and pickle chips. Smother biscuit top with
garlic aioli and place on top of pickles.
5. Serve.
