Below is a brief history of how the drink came to be.Pulque, a fermented beverage derived from the nectar of the maguey (agave), is most closely associated with (and possibly created by) the Teotihuacan civilization, dominant during Mexico’s Classic Period between 150 BC and 700 AD. The beverage became such an important element socially, economically and, as a consequence, religiously, that myths, legends, and cults proliferated around it and its source, the maguey. In the great Indian civilizations of the central highlands, Pulque was served as a ritual intoxicant, a medicinal drink and liquor reserved to celebrate the feats of the brave and the wise. It wielded a heavy sociological influence in the many cultures that followed the Teotihuacan, including the Toltecs and Aztecs, and survived the ravages of European invaders for three centuries, prior to the formation of The Republic of Mexico.
Today, pulque is still an essential aspect of the Mexican culture. It is made by fermenting the fresh sap of certain types of maguey. Any other beverage made from distilling the cooked maguey is mezcal, and if it is manufactured in the Tequila region from a numbered distillery, it is tequila. All three drinks are made from different species of maguey, often called the “century plant” in English. Six or so varieties yield the basic juice for flavorful pulque.
Each century brings the pleasures of this unique beverage to a new generation. Traditional, cultural and celebratory, pulque is thousands of years in the making.
